Morning,
Do you remember when we talked about the beauty of ageing (in coffee, in life)? Lately, we’ve embraced a new positive from collecting years: getting to know yourself.
Discovering what you like, what you don’t like, what you’re really good at, what you could do better, what actually moves you.
After 14+ years in the coffee industry, we’ve seen trends coming and going; we’ve expanded and contracted; we’ve tried new things, failing in some, winning on others. And we've gained a deeper clarity of purpose (or perhaps self-confidence?).
Sharing delicious coffees (with an unapologetic soft spot for single origins, black brewing styles, and washed process lots). Doing it only in a way that means fair, respectful business for all involved. Going above and beyond to make the experience fun, enjoyable and approachable to anyone, from established nerds to beginners.
This clear focus is what drove our Surry Hills espresso bar opening in 2011 and what’s inspired us to bring back our very first pop-up event: Black Coffee Saturday (see header pic, it’s from December 2012!) For now, a one-off on 19 July.
Beyond highlighting delicious single origins on espresso and filter (what moves us), this time it’s also a celebration of everyone who has and keeps making our ageing possible. 🥲
We’d love to have you around. If you can’t make it, please join us in spirit with a beautiful homebrew, just like any other day!
Find updates, latest coffees et al below. Catch you next in August.

News & things
Why our 250g bags (sometimes) look puffy → In short, we removed the gas valve to reduce waste, so gas can’t escape, and it can fill up like a balloon. In long, read our journal post linked right here.
Sample Coffee brewers raised $4,722.60 last FY → Supporting Addi Road Community Centre, Carbon Positive Australia, Deadly Science and The Wilderness Society.
July’s tasting sessions happen this week → As always, first Friday of the month 12.30pm in Surry, first Saturday 8.30am in St Peters.
Black Coffee Saturday is back next 19 July → Going full circle and bringing back our first ever pop-up event.
Strictly coffee
A rare Bolivian that won’t make it to our subscription → Roxana Chambi is our first Bolivian in a while. It features the Red Catuai variety, a human-designed hybrid of Caturra and Mundo Novo launched in 1972. The flavour profile is quite ‘futuristic’: maple syrup, papaya, cacao!
Ethiopia Tadese Teko: absolute staff favourite (really) → We already warned you last month: it’s a good one, subtle in body and acidity, notes of bergamot, mandarin, and mango.
La Serrania Decaf: say no more → The other week, a new cafe account got a few bags. A day or two later, the owner texted saying it was “the first time customers took pictures of their decaf coffee”. Seriously, it tastes as good as any of our other singles.

“Do you ship a new origin every week in your Brew Crew subscription?”
Technically, no.
Our Brew Crew subscription sends a new single origin every 2 weeks. That makes 26 different coffees every year!
So, weekly subscribers receive the same single origin twice.
But, subscribers on the 2-3-4-5 weeks frequency do receive a new one every delivery.
(Brew Crew VS, as for Very Special, is a different branch, and it showcases one rare and premium origin every month)
