Elin Villegas owns a 1-hectare farm where he has Caturra variety planted under a cover of shade.

Like many of his fellow members of the cooperative Lima Coffees, Elin holds organic certification for his farm. Coffee here is picked ripe and depulped the same or the following day, then fermented dry for 36 hours in open-air tanks.

It’s washed three times before being placed in terraces under a cover to dry, and drying takes 25–30 days.

Washed process

Machines are used to remove the flesh from the coffee cherry before being fermented in water, washed again, and finally sun dried. This process tends to result in more distinct, cleaner flavours.
